Warm up and start your day with a warm, fall/winter oatmeal bake. Great out of the oven, even better reheated the next day. Amazing dish for before you run.
Ingredients: Spiced Apples: 2 medium apples (we use honey crisp) 1 tsp coconut oil (melted) 1 tsp cinnamon 1/4 tsp cloves 1/4 tsp nutmeg 1/2 tsp ginger dash cardamon (optional) drizzle of honey Mix: 2 cups coconut milk 1/2 cup maple syrup (the fresher the better) 1 tsp vanilla extract 2 cups rolled oats 1 tsps baking powder 1 tbs ground flax seed pinch of salt 1/3 cup unsweetened apple sauce 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 1/2 tsp ginger
Preheat oven to 350 degreed
Dice apples into preferred chunks. We do a medium dice. Mix all remaining spiced apple ingredients and let it sit In a large bowl add coconut milk, maple syrup, apple sauce and vanilla and mix well. Add in remaining dry ingredients and thoroughly mix. Fold in spiced apple mix. Spray an 8″x8″ pan and add in mixture. Bake for 20-30 minutes until firm. Serve alone, or with granola and maple syrup.
Recommend 6 servings per dish.
